If you do a little bit of research and pick up a good guide book, you'll be fine. Also, not every tour goes to the waterfalls so be sure to ask. How much water is even falling varies by season as well. If you drive to Afareaitu, there is a small road that leads up to the falls and from there you can get out and walk the rest of the way. Many of the key sites such as important marae are marked along the way and a good book will point out those that aren't. I would recommend Rob Kay's "Hidden Tahiti" for self-guided hikes and drives - it's much better than the other books in this regard.

Islandbreeze, there is a new edition coming out the end of July so if you can, wait for the new one as it will be more up to date.
