Well stumbling around on the web I found this:

Has anybody ate sea urchin in Tahiti? Seems to be enough of them hanging around the overwater bungalows and sea walls. I went on a stingray feeding tour where they broke them up with a stick, then grabbed the spines and fed the meat to pufferfish. The meat didn't look orange like on that webpage so I'm wondering if the common type I see in FP is edible or not.

is called "vana" a delicacy, quite expensive, when you are on Moorea you can taste it at Aito, they serve it sometimes

BTW interesting enough the taste from sea urchins around the Mediteranean coast is different (better) as there is a lot of iodine in the sea water whereas in FP the sea has no iodine

Black sea urchin is very good. It's almost never on a menu
If you want to try it call Jean Baptiste at 56 45 52 Aito's
and ask him if has it avaliable when your on Moorea

Nothing better than fresh sea urchin(Uni in Japanese). As we are meeting Jan Prince and Barbi for lunch at Aito's, I'll need to get in touch with him.

The sea urchins you see in the lagoon are not edible. You should stay well away from them as they have the sharpest poisonnous spines that will break in your skin and won't heal for a long time.

The good sea urchins (with thick spines) are found on top of the reef where the surf washes. Don't attempt to get those either as a wave could wash you over the sharp coral and shread you. Very dangerous.

Best to get them from Jean-Baptiste, ready to eat...

p.s. ...and Poere is right, sea urchins taste (and look ) different depending where thay are located. I dive for them in California and they taste different than the ones in FP or the Med (which are smaller, but the best).

while you're "at it" try some "Varo" as well... mouth watering LOL

In case one gets stung by a sea urchin, the very best most efficient, fast remedy is: just to "p" on the wounds ... while you'll have a unique but temporary type of souvenir sitting under your skin the particles will eventually disappear

DJ It's a crustacé, squille, sorry I don't know the name in English, it is sort of a cousin of the langouste, really delicious, very very hard to get. Or try cigale, "tianee" check with Vanina, JB's wife she's the one cooking anyways!

These species are now protected by rules concerning when, where, size,how to fish, so not always available
