Ok to sweeten up the board a little, here comes for appr. 6 pers, to be eaten with moderation lol:

Get vanilla, slice open, take out grains, put 1 ltr of milk in a sauce pan, add vanilla bean and grains and bring softly to a boil and keep warm.
Seperate 6 eggs, and beat the whites (with a pinch of salt) wisk in little by little 80 grm. of sugar beat to firm peaks
Shape them (with a large soup spoon or whatever) into small "islands" and dip one by one into the hot milk for a minute orso on each side until it swells up, (it doubles!) put aside. When done, turn off heat

Crème anglaise:
Put the 6 egg yolks (not good for cholesterol...) in a bowl and wisk in 150 gr sugar little by little (not for dieters either)
and beat until it becomes sort of white, drain the milk and add little by little to the mixture, transfer to a pan and heat very slowly while stirring continuously until the mixture becomes thick like a sauce, let cool off.

Put the crème in a presentable dish or on individual plate, put the "islands" onto the cream

Déco caramel:
Put sugar (100 grms) with a little bit of water in a saucepan and bring slowely to heat (not boil!) don't stir but rather move the pan slowly over the heat until the sugar colors brown and becomes siruppy like (but not too dark) cool off immediately by putting the pan in a tray filled with cold water

Splash the caramel over the "islands" and keep in fridge until served et voilà bon appétit, tama'a maita'i!

(to be eaten same day, doesn't keep well and follwed by 2 days of dieting)

You're killing us, P!!! The recipe is just teasing us. I'll try it here in Australia (probably without photos) and let you know how it tastes (Cath is the dessert eater, so she is the one that needs convincing).
