Check out the link to Tahiti Tourisme US that I posted above - it has heaps of info about each island but as a rule I think that they say budget for approx $100 pp if you want to eat at top restaurants and do every activity available on BB.
I think on our last visit (which was almost 3 weeks duration) we spent $3K which consisted mainly of Tahiti Drink, Tahiti Rum, tours/activities and souvenirs.
Also, see if you can pick up Jan Prince's Tahiti Open Road Guide (2008) which will give you an idea about prices/tours/activities etc.
