I would begin the paperwork process before you travel there, because it is complicated and takes some time to get an approved work permit. When are you planning to go to French Polynesia (and when to begin work)? I do not think an email to the French Embassy will be enough effort; you should download the forms at the websites above and start to process your paperwork with your employer.

Pago, The employer might not necessarily know about the requirements if this is the first non-resident employee hired...

The right order to do the workpermit thing is getting a carte de sejour = resident permit first as without that you will not be able to get a workpermit. Yes, normally if the employer hires you while you are still in Europe (or wherever) he needs to pay for your plane ticket, which has to be a return also (no people allowed in with a oneway..)
If you want to apply for the workpermit yourself you'd need to have the job offer in writing from your future employer!!! The future employer also has to publish (1 month) the same job offer here in FP so local people can apply as well. Then he has to prove that he could not find a local person to do that job, after that he's allowed to hire someone outside of FP!
The future employer should really do all that for you and yes normally he'd have to apply for your visa (resident visa and work permit) before you arrive! I am kind of curious, is it a pearl shop owner or pearl farm owner? You don't have to answer that if you don't want to.
If the future employer has no back-tax problem and is up to date with social security payments, he should have no prob getting the visa, although at this time unemployment has the highest number since FP's history... so it may all take a while.
